Common applications: Technical effect: Antioxidant, Antimicrobial, Nutrient supplement, pH control agent, Flavor enhancer, Dough conditioner /strengthener. Stabilizer or thickener. Uses: Vitamin C, as preservative (lowers pH); and antioxidant. preventing discoloration of fruit products. Juices, frozen fruit, dry milk, beer, jellies. Provides tartness. Curing or pickling agent, meat products.
