Small scale independent distillery in the South of England.
I am setting up a small scale independent distillery and would value some feedback at this early stage from fellow whisky lovers. The survey will only take a few minutes of your time and the results will be used to guide product development.
As a small, independent operation (<3500 l per annum, family run business) we have the flexibility, control and attention to detail to produce handmade, innovative and high quality products. Initially the distillery will be producing premium Vodka (exceeding EU standards), including some oak aged expressions (think young grain whisky), from which a range of seasonal Gin and Schnapps will be developed (including bespoke, tailor made options). All of the botanicals, wood and produce used in making and flavouring the spirits will be sustainably sourced, foraged and/or local, where possible, ensuring use of the freshest and best ingredients available.
Eventually there will also be a diverse range of Whisky released.Traditional Whisky will be made and left to mature in oak casks, but we shall not be idle while we wait for it! My background is in scientific research and I plan to use these skills to develop some truly radical Whisky using modern laboratory techniques and analysis. The majority of this Whisky will be matured with accelerated techniques and as such released as NAS (No age statement) Whisky in keeping with current trends, but with my commitment to innovation, quality and sustainability I hope to redefine this term and show drinkers that it is maturity that matters and not age.
