The New York State, Office of General Services (OGS), Procurement Services is conducting a survey to help determine if there is a need for a centralized (statewide) contract for compostable cafeteria trays.

Cafeteria trays are designed to be used directly for food service with or without dishes. They usually incorporate several shallow partitions into which different types of food are placed. A material that is frequently used for disposable cafeteria trays is polystyrene.

Compostable cafeteria trays are typically made of a molded fiber such as sugarcane (bagasse), wheat straw or other rapidly renewable materials. They are a more sustainable alternative to polystyrene trays when combined with either an on-site or commercial composting program, and they may be used for either hot or cold foods. Benefits of using compostable trays along with a composting program include the ability to compost the tray without having to clean it, the ability to compost leftover food along with the compostable tray and the diversion of solid waste from the landfill.
