Potatoes USA Sponsored Satelite Symposium 2022
1.
Following the presentations, I now believe:
The glycemic index is a good tool for all Americans to help identify high quality carbohydrate-containing foods
The glycemic index has some flaws but is still a useful tool for broad based dietary recommendations for all Americans
The glycemic index is appropriate for use only among people with blood sugar control issues
The glycemic index is too variable and does not account for other factors that impact carbohydrate metabolism and thus, should not be a standalone tool to assess carbohydrate quality
